1 cup of all-purpose flour
1 cup of whole wheat flour
1/2 cup of granulated sugar
1 tablespoon of baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1 teaspoon of vanilla extract
2 large eggs
1 cup of plain Greek yogurt
1/3 cup of vegetable oil
Optional: 1 cup of mix-ins like blueberries, chopped nuts, or chocolate chips
Preheat your oven to 350°F (175°C).
Grease a 12-cup muffin pan or line it with paper liners.
In a large bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and salt.
In another bowl, beat the eggs. Add the Greek yogurt, vegetable oil, and vanilla extract. Stir until smooth.
Pour the wet ingredients into the dry ingredients and gently fold them together until just combined.
If using any fruits, nuts, or chocolate chips, fold them in gently.
Divide the batter evenly among the muffin cups, filling each about 2/3 full.
Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
Let them sit in the pan for about 5 minutes before transferring to a wire rack to cool completely.
