  • 1 pound smoked sausage (andouille or kielbasa)
  • 1 medium onion, diced
  • 2 cloves fresh garlic, minced
  • 1 cup long-grain white rice
  • 4 cups chicken broth
  • 1 can (15 oz) black-eyed peas, drained and rinsed
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • Chopped green onions or parsley for garnish

  • Instructions

  • In a large pot, heat a little oil over medium heat. Add the smoked sausage and cook until it's browned, about 5-7 minutes.
  • Add the diced onion and cook until translucent, about 3-5 minutes.
  • Stir in the minced garlic and sauté for an additional minute.
  • Add the rice and stir well, allowing it to toast slightly for about 2 minutes.
  • Pour in the chicken broth and add the black-eyed peas, smoked paprika, thyme, and bay leaf. Stir well.
  • Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for about 20 minutes.
  • After 20 minutes, remove from heat and let it sit covered for another 5 minutes.
  • Remove the bay leaf, fluff the rice with a fork, adjust seasoning with salt and pepper, and serve hot.
