1 pound smoked sausage (andouille or kielbasa)
1 medium onion, diced
2 cloves fresh garlic, minced
1 cup long-grain white rice
4 cups chicken broth
1 can (15 oz) black-eyed peas, drained and rinsed
1 teaspoon smoked paprika
1 teaspoon dried thyme
1 bay leaf
Salt and pepper, to taste
Chopped green onions or parsley for garnish
In a large pot, heat a little oil over medium heat. Add the smoked sausage and cook until it's browned, about 5-7 minutes.
Add the diced onion and cook until translucent, about 3-5 minutes.
Stir in the minced garlic and sauté for an additional minute.
Add the rice and stir well, allowing it to toast slightly for about 2 minutes.
Pour in the chicken broth and add the black-eyed peas, smoked paprika, thyme, and bay leaf. Stir well.
Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for about 20 minutes.
After 20 minutes, remove from heat and let it sit covered for another 5 minutes.
Remove the bay leaf, fluff the rice with a fork, adjust seasoning with salt and pepper, and serve hot.
