1 large head of green cabbage
1 lb ground beef
1 cup long-grain rice, rinsed
1 large onion, finely chopped
2 cloves garlic, minced
1 can (15 oz) diced tomatoes, with juice
1 teaspoon allspice
1 teaspoon cinnamon
Salt and pepper, to taste
2 tablespoons olive oil
1 cup chicken or vegetable broth
Instructions
Bring a large pot of water to a boil. Carefully remove the core from the cabbage using a sharp knife, then gently place it in the boiling water. Cook for about 2-3 minutes, or until the outer leaves start to soften. Peel off the outer layers as they soften, and continue until you have about 12 leaves.
In a large bowl, combine the ground beef, rinsed rice, chopped onion, minced garlic, diced tomatoes (with juice), allspice, cinnamon, and a generous sprinkle of salt and pepper. Mix until just combined.
Take a softened cabbage leaf and place about 2 tablespoons of the filling at the bottom near the stem. Fold in the sides and roll it up tightly. Repeat until all the filling is used.
In a large pot or deep skillet, lay down any leftover cabbage leaves to create a bed for your rolls. Arrange the rolls seam-side down in a single layer.
Pour the chicken or vegetable broth over the rolls, then drizzle with olive oil. Cover and simmer on low for about 45 minutes, or until the rice is cooked and the cabbage is tender.
