1/2 cup unsalted butter
1 cup brown sugar
2 cups cranberries (fresh or frozen)
1 can (20 oz) pineapple rings
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup milk
Instructions
Preheat the oven to 350°F (175°C).
In a 9×13-inch baking dish, melt 1/2 cup of unsalted butter over low heat and sprinkle 1 cup of brown sugar evenly over the butter.
Arrange pineapple rings on top of the brown sugar mixture and place some cranberries inside the rings.
In a large mixing bowl, whisk together 1 1/2 cups of all-purpose flour, 2 tsp of baking powder, and 1/2 tsp of salt.
In another bowl, cream together 3/4 cup granulated sugar and 2 large eggs. Add 1 tsp of vanilla extract and 1/2 cup of milk, mixing well.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Pour the batter over the pineapple and cranberries in the baking dish.
Bake in the preheated oven for 30-35 minutes, or until a toothpick comes out clean.
