1 cup sago pearls
2 ripe mangoes
1 can (400ml) coconut milk
1/4 cup sugar
Pinch of salt
Fresh mint leaves for garnish (optional)
Additional toppings like diced fruits or shredded coconut (optional)
Instructions
In a pot, bring about 5 cups of water to a rolling boil. Add the sago pearls slowly, stirring gently to prevent clumping. Reduce the heat to medium and let them cook for about 10-12 minutes, or until they become translucent.
Drain the sago pearls using a fine sieve and rinse them under cold water to stop the cooking process. Let them sit in a bowl for a while to cool down.
Peel and dice the ripe mangoes. Reserve some pieces for garnish, and blend the rest in a food processor or blender until smooth.
In a saucepan, gently heat the coconut milk over low heat. Stir in the sugar and a pinch of salt until dissolved.
In a large mixing bowl, combine the cooled sago pearls, the mango puree, and the warm coconut milk. Stir until everything is well mixed.
Cover the bowl with plastic wrap and let it chill in the fridge for at least 30 minutes.
Once chilled, scoop the mango sago into serving bowls. Top with the reserved mango pieces and any additional toppings you fancy.
