1 pound large shrimp, peeled and deveined
2 cups baby red potatoes, halved
1 cup corn on the cob, cut into chunks
4 cloves garlic, minced
1 tablespoon Cajun seasoning
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and pepper, to taste
Fresh parsley, chopped, for garnish
Aluminum foil, for wrapping
Instructions
Preheat your oven to 400°F (200°C).
Tear off 4 large sheets of aluminum foil (about 12 inches each).
In a large bowl, combine the shrimp, halved potatoes, corn, minced garlic, Cajun seasoning, olive oil, lemon juice, salt, and pepper. Toss until evenly coated.
Spoon an equal amount of the shrimp and vegetable mixture onto each foil sheet.
Carefully fold the sides of the foil up and crimp the ends to seal each packet tightly.
Place the packets on a baking sheet and bake for about 20-25 minutes, or until the shrimp are pink and cooked through.
