  • Instructions

  • Start by placing the peeled and cubed potatoes in a large pot. Cover them with cold water and add a generous pinch of salt. Bring the pot to a boil, then reduce to a simmer. Cook for about 20 minutes, or until the potatoes are fork-tender.
  • Once the potatoes are cooked, drain them in a colander and let them sit for about 5 minutes to steam dry.
  • Return the drained potatoes to the warm pot and use a potato masher or ricer. Add the butter and mix well until melted.
  • Fold in the heavy cream, egg yolks, salt, pepper, and nutmeg, and beat until smooth.
  • Preheat your oven to 400°F (200°C). Transfer the mixture to a piping bag and pipe rosettes onto a lined baking sheet.
  • Bake for about 20 minutes or until light golden brown.
