2 pounds of potatoes, peeled and cubed
½ cup of unsalted butter
½ cup of heavy cream
2 large egg yolks
Salt to taste
Black pepper to taste
A pinch of nutmeg, freshly grated

Instructions
Start by placing the peeled and cubed potatoes in a large pot. Cover them with cold water and add a generous pinch of salt. Bring the pot to a boil, then reduce to a simmer. Cook for about 20 minutes, or until the potatoes are fork-tender.
Once the potatoes are cooked, drain them in a colander and let them sit for about 5 minutes to steam dry.
Return the drained potatoes to the warm pot and use a potato masher or ricer. Add the butter and mix well until melted.
Fold in the heavy cream, egg yolks, salt, pepper, and nutmeg, and beat until smooth.
Preheat your oven to 400°F (200°C). Transfer the mixture to a piping bag and pipe rosettes onto a lined baking sheet.
Bake for about 20 minutes or until light golden brown.
