1 lb (450g) boneless, skinless chicken thighs or breasts, cubed
1 cup long-grain white rice
1 medium onion, chopped
3 cloves garlic, minced
1 cup chicken broth
1 cup smoky BBQ sauce
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels
1 tsp smoked paprika
Salt and pepper, to taste
Chopped fresh parsley or cilantro, for garnish
Instructions
Start by cubing the chicken and chopping the onion. Mince the garlic too.
In a large pot or Dutch oven, heat a little olive oil over medium-high heat. Season the chicken cubes with salt and pepper, then add them to the pot. Cook until they’re golden brown on the outside, about 5–7 minutes.
Toss in the chopped onion and minced garlic. Stir it all together and let it cook for a couple of minutes until the onion becomes soft and translucent.
Pour in the rice and sprinkle the smoked paprika. Give it a good stir, letting the rice soak in those glorious flavors for about a minute.
Carefully pour in the chicken broth and BBQ sauce. Stir to combine everything, making sure to scrape up any bits stuck to the bottom of the pot.
Add the black beans and corn into the pot, stirring to ensure everything is well distributed.
Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes.
Once it’s ready, remove the pot from heat. Fluff the rice gently with a fork, and sprinkle it all with fresh parsley or cilantro.
