  • 1 lb (450g) boneless, skinless chicken thighs or breasts, cubed
  • 1 cup long-grain white rice
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup smoky BBQ sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • Chopped fresh parsley or cilantro, for garnish

  • Instructions

  • Start by cubing the chicken and chopping the onion. Mince the garlic too.
  • In a large pot or Dutch oven, heat a little olive oil over medium-high heat. Season the chicken cubes with salt and pepper, then add them to the pot. Cook until they’re golden brown on the outside, about 5–7 minutes.
  • Toss in the chopped onion and minced garlic. Stir it all together and let it cook for a couple of minutes until the onion becomes soft and translucent.
  • Pour in the rice and sprinkle the smoked paprika. Give it a good stir, letting the rice soak in those glorious flavors for about a minute.
  • Carefully pour in the chicken broth and BBQ sauce. Stir to combine everything, making sure to scrape up any bits stuck to the bottom of the pot.
  • Add the black beans and corn into the pot, stirring to ensure everything is well distributed.
  • Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes.
  • Once it’s ready, remove the pot from heat. Fluff the rice gently with a fork, and sprinkle it all with fresh parsley or cilantro.
