4 large leeks
1 pound ground beef
1 small onion, diced
2 cloves garlic, minced
1/2 cup cooked rice
1/2 cup grated Parmesan cheese
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
Salt and pepper to taste
1/4 cup fresh parsley, chopped
Olive oil
1 cup beef broth
Slice the leeks in half lengthwise and soak them in cold water to remove any dirt.
In a skillet, heat olive oil over medium heat. Sauté the diced onion and minced garlic until the onion is translucent.
Add the ground beef to the skillet, cooking until browned. Stir in Worcestershire sauce, salt, pepper, and thyme.
In a large bowl, mix the beef mixture with cooked rice, Parmesan cheese, and fresh parsley.
Preheat your oven to 375°F (190°C). Stuff each leek half with the beef filling and arrange them in a baking dish, cut side up.
Pour the beef broth into the baking dish, being careful not to splash it on the leeks.
Cover with foil and bake for 25 minutes. Then remove the foil and bake for another 15 minutes until the leeks are tender.
Let sit for a few minutes before serving. Drizzle with any leftover broth for added flavor.
