  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella, diced
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic glaze
  • Salt and pepper, to taste
  • Toothpicks or kitchen twine, for securing the chicken

  • Instructions

  • Preheat your oven to 375°F (190°C).
  • In a medium bowl, combine the halved cherry tomatoes, diced mozzarella, chopped basil, minced garlic, and a splash of olive oil. Season with salt and pepper to taste.
  • Take each chicken breast and use a sharp knife to create a pocket. Insert the knife horizontally and cut into the side, being careful not to cut all the way through.
  • Gently fill each pocket with the Caprese mixture and secure the openings with toothpicks or kitchen twine.
  • Heat a large oven-safe skillet over medium-high heat and add a little olive oil. Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
  • Transfer the skillet to your preheated oven and bake for about 10-12 minutes, or until the chicken is cooked through.
  • If using balsamic glaze, drizzle it over the chicken right before serving.
  • Let the chicken rest for a few minutes before removing the toothpicks or twine, then slice and enjoy.
