4 boneless, skinless chicken breasts
1 cup fresh spinach, chopped
4 ounces feta cheese, crumbled
1/2 cup cream cheese, softened
2 cloves garlic, minced
1/4 cup sun-dried tomatoes, chopped
1 teaspoon dried oregano
Salt and pepper to taste
2 tablespoons olive oil
1/2 cup chicken broth
Instructions
Preheat your oven to 375°F (190°C). While it's warming up, take your chicken breasts and make a pocket in each one by carefully slicing them lengthwise.
In a mixing bowl, combine chopped spinach, crumbled feta, softened cream cheese, minced garlic, sun-dried tomatoes, dried oregano, and salt and pepper. Mix until well combined.
Using a spoon, carefully fill each chicken breast with the spinach feta mixture, securing the openings with toothpicks or kitchen twine if necessary.
Heat olive oil in an oven-safe skillet over medium-high heat. Add the stuffed chicken breasts and sear for about 4-5 minutes on each side until golden brown.
Pour in the chicken broth without washing away the crispy bits from the skillet.
Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
Let the chicken rest for a few minutes before serving.
