Ingredients
Scale
1 ½ pounds boneless, skinless chicken breasts, cut into 1-inch cubes
1/4 cup of honey (pure for the best flavor)
Juice and zest of 2 limes (fresh is always best!)
3 cloves garlic, minced (fresh garlic adds more punch than powdered)
2 tablespoons of soy sauce
1 tablespoon of olive oil
1 teaspoon of salt
1/2 teaspoon of black pepper
Wooden or metal skewers (if using wooden, soak them in water for 30 minutes to prevent burning)
Instructions
In a large bowl, combine honey, lime juice, lime zest, minced garlic, soy sauce, olive oil, salt, and pepper. Mix until well blended. Add the chicken cubes and stir to coat them evenly. Cover and let marinate in the fridge for at least 30 minutes (or up to 3 hours for extra flavor).
While the chicken marinates, prepare your skewers. If using wooden skewers, ensure they have soaked for at least 30 minutes. Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
Preheat your grill to medium-high heat. It’s important to get it nice and hot to achieve those beautiful grill marks!
Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally. You’ll know they’re done when the chicken is no longer pink in the center (internal temperature should reach 165°F) and has lovely charred spots.
Once cooked, remove from the grill and let the skewers rest for a few minutes. This helps retain the juiciness. Serve with a sprinkle of fresh chopped cilantro or additional lime wedges.
