3–4 lb beef chuck roast
3 large onions, sliced thinly
4 cloves fresh garlic, minced
2 cups beef broth
1 cup dry white wine
2 tablespoons balsamic vinegar
1 tablespoon Worcestershire sauce
2 teaspoons dried thyme
2 tablespoons olive oil
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Preheat your oven to 325°F (165°C).
Season the chuck roast generously with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until brown, about 3-4 minutes per side.
Remove the roast from the pot and set aside. Add sliced onions to the pot and cook until caramelized, about 20 minutes.
Add minced garlic and cook for an additional minute.
Pour in white wine, balsamic vinegar, and Worcestershire sauce, scraping any browned bits from the bottom.
Stir in beef broth and dried thyme. Return the roast to the pot.
Cover and bake for 3-4 hours, checking occasionally.
Once done, let the roast rest for 15 minutes before slicing and serving with the caramelized onions and broth.
