  • 2 cups of beef broth
  • 1 teaspoon of dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

  • Instructions

  • Cut the beef chuck roast into 2-inch cubes, season with salt and pepper.
  • Heat the olive oil in a large pot over medium-high heat. Brown the beef in batches on all sides.
  • Remove the browned beef and set aside. Add diced onions to the pot and sauté until translucent. Then add garlic, carrots, and any other vegetables, sautéing for about 5 minutes.
  • Pour in the red wine, scraping up any brown bits from the pot. Allow the wine to reduce slightly for about 5 minutes. Add the beef broth, thyme, and bay leaves.
  • Return the browned beef to the pot. Bring to a gentle boil, reduce heat to low, cover, and simmer for about 70 minutes.
  • Taste the stew after 70 minutes and adjust seasoning. If too thick, add broth or water; if too thin, simmer uncovered for a few more minutes.
  • Once finished, remove bay leaves and serve hot, garnished with fresh herbs.
