2 pounds of beef chuck roast
2 tablespoons of olive oil
4 medium carrots, sliced
1 large yellow onion, diced
4 garlic cloves, minced
1 cup of red wine
2 cups of beef broth
1 teaspoon of dried thyme
2 bay leaves
Salt and pepper to taste
Instructions
Cut the beef chuck roast into 2-inch cubes, season with salt and pepper.
Heat the olive oil in a large pot over medium-high heat. Brown the beef in batches on all sides.
Remove the browned beef and set aside. Add diced onions to the pot and sauté until translucent. Then add garlic, carrots, and any other vegetables, sautéing for about 5 minutes.
Pour in the red wine, scraping up any brown bits from the pot. Allow the wine to reduce slightly for about 5 minutes. Add the beef broth, thyme, and bay leaves.
Return the browned beef to the pot. Bring to a gentle boil, reduce heat to low, cover, and simmer for about 70 minutes.
Taste the stew after 70 minutes and adjust seasoning. If too thick, add broth or water; if too thin, simmer uncovered for a few more minutes.
Once finished, remove bay leaves and serve hot, garnished with fresh herbs.
