Ingredients
Scale
1 pound of baby calamari, cleaned and ready to cook
4 cups of mixed salad greens (baby spinach, arugula, or your favorite salad mix)
1 cup of cherry tomatoes, halved
1 cucumber, diced
1 bell pepper, sliced thin
1/4 cup of red onion, thinly sliced
1/4 cup of Kalamata olives, pitted and halved
2 tablespoons of fresh parsley, chopped
1 lemon, juiced
3 tablespoons of olive oil
Salt and pepper, to taste
1/2 teaspoon of red pepper flakes (optional)
Instructions
Prepare the calamari: In a medium pot, fill it with water and add a pinch of salt. Bring it to a boil. Carefully add the cleaned baby calamari and cook briefly—about 1 to 2 minutes max. Drain and set aside to cool.
Mix the salad base: In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, bell pepper, red onion, and olives. Toss them gently to ensure everything is evenly distributed.
Make the dressing: In a small bowl, whisk together the lemon juice, olive oil, salt, pepper, and red pepper flakes (if using).
Combine it all: Once the calamari has cooled, add it to the salad bowl. Drizzle the dressing over the top, and gently toss everything together until well-coated.
Garnish and serve: Sprinkle fresh parsley over the salad. Serve immediately for the best flavor.
