1 lb of boneless steak (sirloin or ribeye work best)
4 large potatoes, peeled and diced
1 cup of shredded cheddar cheese
½ cup of unsalted butter
5 cloves of garlic, minced
1 teaspoon of salt
½ teaspoon of black pepper
1 teaspoon of dried thyme
¼ cup of chopped fresh parsley
Instructions
Preheat the oven to 400°F (200°C).
In a large pot, bring salted water to a boil and add your diced potatoes. Cook for about 10-12 minutes, until fork-tender. Drain and set aside.
In a large skillet over medium-high heat, melt ¼ cup of the butter. Add your steak, seasoning with salt, pepper, and thyme. Sear for about 3-4 minutes on each side until browned. Remove from heat and let rest.
Chop your steak into bite-sized pieces.
In a large mixing bowl, combine the cooked potatoes, chopped steak, minced garlic, and remaining melted butter. Mix gently to coat everything well.
Transfer your mixture to a greased 9×13 inch baking dish and spread it out evenly. Top with shredded cheddar cheese.
Bake for about 20-25 minutes until the cheese is bubbly and golden brown on top.
Once it’s out of the oven, sprinkle with fresh parsley and let it cool slightly before serving.
