  • ½ teaspoon of salt
  • 1 cup of unsalted butter, softened
  • 1 cup of brown sugar, packed
  • ½ cup of granulated sugar
  • 1 large egg
  • 2 teaspoons of vanilla extract
  • ⅓ cup of brewed coffee, cooled
  • 1 cup of powdered sugar (for dusting)

  • Instructions

  • Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together your flour, baking soda, baking powder, ginger, cinnamon, nutmeg, cloves, and salt. Make sure there are no lumps!
  • In another bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy. This should take about 2-3 minutes with an electric mixer.
  • Add in the egg, vanilla extract, and coffee to the butter mixture. Beat well until everything is nicely incorporated.
  • Gradually add your dry ingredients to the wet ingredients. Mix until just combined, being careful not to overmix.
  • Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are golden brown but the centers still look slightly soft.
  • Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Dust with powdered sugar for that beautiful finish!
