2¾ cups of all-purpose flour
1 teaspoon of baking soda
1 teaspoon of baking powder
¾ teaspoon of ground ginger
1 teaspoon of ground cinnamon
½ teaspoon of ground nutmeg
¼ teaspoon of ground cloves
½ teaspoon of salt
1 cup of unsalted butter, softened
1 cup of brown sugar, packed
½ cup of granulated sugar
1 large egg
2 teaspoons of vanilla extract
⅓ cup of brewed coffee, cooled
1 cup of powdered sugar (for dusting)
Instructions
Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together your flour, baking soda, baking powder, ginger, cinnamon, nutmeg, cloves, and salt. Make sure there are no lumps!
In another bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy. This should take about 2-3 minutes with an electric mixer.
Add in the egg, vanilla extract, and coffee to the butter mixture. Beat well until everything is nicely incorporated.
Gradually add your dry ingredients to the wet ingredients. Mix until just combined, being careful not to overmix.
Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are golden brown but the centers still look slightly soft.
Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Dust with powdered sugar for that beautiful finish!
