  • ½ cup of Sugar
  • 1 tablespoon of Gelatin powder
  • 3 tablespoons of Water
  • ½ cup of Espresso or strong coffee
  • 2 tablespoons of Molasses
  • 1 teaspoon of Ground ginger
  • ½ teaspoon of Cinnamon
  • ¼ teaspoon of Nutmeg
  • ¼ teaspoon of Salt
  • 1 ounce of Dark chocolate (for decoration)

  • Instructions

  • In a small bowl, sprinkle the gelatin over the water and let it bloom for about 5 minutes.
  • While the gelatin blooms, brew your espresso or strong coffee and allow it to cool slightly.
  • In a large mixing bowl, combine the heavy cream and sugar, beating until soft peaks form. Gently fold in the espresso, molasses, ground ginger, cinnamon, nutmeg, and salt.
  • Heat the bloomed gelatin in a microwave for about 10 seconds to dissolve and stir it into the mousse mixture.
  • Pour the mousse mixture into dome-shaped silicone molds, cover, and refrigerate for at least 4 hours or until set.
  • Once set, carefully remove the mousse domes from the molds.
  • Melt the dark chocolate and drizzle over the domes to decorate.
