1 cup of Heavy cream
½ cup of Sugar
1 tablespoon of Gelatin powder
3 tablespoons of Water
½ cup of Espresso or strong coffee
2 tablespoons of Molasses
1 teaspoon of Ground ginger
½ teaspoon of Cinnamon
¼ teaspoon of Nutmeg
¼ teaspoon of Salt
1 ounce of Dark chocolate (for decoration)
Instructions
In a small bowl, sprinkle the gelatin over the water and let it bloom for about 5 minutes.
While the gelatin blooms, brew your espresso or strong coffee and allow it to cool slightly.
In a large mixing bowl, combine the heavy cream and sugar, beating until soft peaks form. Gently fold in the espresso, molasses, ground ginger, cinnamon, nutmeg, and salt.
Heat the bloomed gelatin in a microwave for about 10 seconds to dissolve and stir it into the mousse mixture.
Pour the mousse mixture into dome-shaped silicone molds, cover, and refrigerate for at least 4 hours or until set.
Once set, carefully remove the mousse domes from the molds.
Melt the dark chocolate and drizzle over the domes to decorate.
