2 ¾ cups of all-purpose flour
1 tablespoon of ground ginger
2 teaspoons of cinnamon

1 teaspoon of baking soda
½ teaspoon of salt
¾ cup of unsalted butter (softened)
1 cup of brown sugar (packed)
½ cup of molasses
1 large egg
1 teaspoon of vanilla extract
2 cups of powdered sugar (for frosting)
Instructions
In a large mixing bowl, cream together the softened butter and brown sugar using a hand mixer or stand mixer until it’s light and fluffy (2-3 minutes).
Add the egg, vanilla extract, and molasses to the butter and sugar mixture. Beat until fully combined and smooth.
In a separate bowl, whisk together the flour, ground ginger, cinnamon, ground cloves, baking soda, and salt. Gradually incorporate into the wet ingredients, mixing until just combined.
Cover the dough with plastic wrap and refrigerate for at least 1 hour.
Preheat your oven to 350°F (175°C) while the dough chills. Line baking sheets with parchment paper.
On a floured surface, roll out the chilled dough to about ¼ inch thick. Use cookie cutters to cut out shapes and place them on the prepared baking sheets.
Bake for 10-12 minutes or until the edges are just starting to set.
Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
In a separate bowl, beat together the powdered sugar and water until smooth and creamy.
Once cooled, spread a layer of frosting on the bottom of a cookie and press another cookie on top to assemble sandwiches.
