Instructions
In a food processor, blend the almond flour, soaked dates, melted coconut oil, vanilla extract, and salt until it forms a sticky crumb.
Press the mixture into the bottom and up the sides of a 9-inch tart pan.
Preheat your oven to 350°F (175°C) and bake the crust for 10-12 minutes until lightly golden.
In a blender, combine the raspberries, soaked cashews, maple syrup, lemon juice, vanilla extract, and optionally, agar agar. Blend until silky smooth.
Once the crust has cooled, pour the raspberry cream filling into the tart shell and smooth the top to your liking.
