1 lb chicken sausage (any flavor)
1 cup orzo pasta
3 cups low-sodium chicken broth
1 medium onion, diced
3 cloves garlic, minced
1 red bell pepper, diced
1 cup spinach or kale, chopped
1 tsp dried oregano
1 tsp paprika
Salt and pepper, to taste
2 tbsp olive oil
Fresh parsley, chopped (for garnish)
Heat the olive oil in a large pot or deep skillet over medium heat.
Add the chicken sausage, breaking it up with a spoon, and cook for 4-5 minutes until browned.
Stir in the diced onion and red bell pepper, sauté for 3-4 minutes until softened, then add minced garlic and cook for 1 minute.
Stir in the orzo pasta until coated in the flavors.
Pour in the chicken broth, sprinkle in oregano and paprika, bring to a boil, reduce to simmer, cover and cook for 10 minutes or until orzo is tender.
Add chopped spinach or kale, cook for another 1-2 minutes until wilted.
Taste and adjust seasoning with salt and pepper.
Garnish with fresh parsley and serve warm.
