1 pound of healthy chicken sausage
1 cup orzo pasta
1 tablespoon olive oil
1 medium onion, diced
3 cloves of garlic, minced
1 bell pepper, diced
2 cups fresh spinach, chopped
1 can (14 oz) diced tomatoes
2 cups low-sodium chicken broth
1 teaspoon dried oregano
1 teaspoon Italian seasoning
Salt and pepper to taste
Grated Parmesan cheese for serving
In a large skillet over medium heat, add olive oil. Once shimmering, add chicken sausage, browning it on all sides for 5-7 minutes.
Add diced onion and bell pepper, stirring until softened, about 3-4 minutes. Add minced garlic and sauté for another minute.
