2 tablespoons of olive oil
1 onion, diced
3 cloves of fresh garlic, minced
1 pound of pork shoulder, cut into bite-sized cubes
1 medium green bell pepper, diced
1 can (4 ounces) of diced green chiles
4 cups of chicken broth
2 cups of diced potatoes
1 teaspoon of ground cumin
1 teaspoon of smoked paprika
1/2 teaspoon of ground oregano
Salt and pepper to taste
2 tablespoons of fresh cilantro, chopped (optional)
Sour cream (optional, for serving)
In a large pot or Dutch oven, heat the olive oil over medium heat until shimmering.
Add the diced onion and cook until translucent, about 5 minutes. Then, add the minced garlic and cook for another minute until fragrant.
Toss in the pork shoulder cubes, cooking until browned on all sides (about 5–7 minutes).
Stir in the green bell pepper and diced potatoes.
Pour in the chicken broth and add the diced green chiles, cumin, smoked paprika, oregano, salt, and pepper. Bring to a gentle boil.
Reduce the heat to low, cover the pot, and let it simmer for 1.5 to 2 hours.
After 1.5 hours, taste the stew and adjust the seasoning if needed.
Ladle into bowls and sprinkle with freshly chopped cilantro and optional sour cream.
