2 tablespoons of olive oil
1 large onion, diced
2 carrots, chopped
2 celery stalks, chopped
3 cloves of garlic, minced
1 bell pepper, diced
1 zucchini, diced
1 cup of mushrooms, sliced
1 can (14.5 oz) of diced tomatoes with juices
1 cup of barley
6 cups of vegetable broth
2 teaspoons of dried oregano
1 teaspoon of dried thyme
Salt and pepper to taste
Fresh parsley, chopped for garnish
Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the veggies soften and the onion is translucent.
Stir in the minced garlic and diced bell pepper. Cook for another 1-2 minutes until fragrant.
Toss in the zucchini and mushrooms, stirring everything together. Let them cook for an additional 3-4 minutes.
Pour in the can of diced tomatoes (including juices), the barley, and the vegetable broth. Give it a good stir.
Add in the dried oregano and thyme, then sprinkle with salt and pepper to taste. Bring the mixture to a gentle boil.
Once boiling, reduce the heat to low and cover the pot. Let it simmer for 30-40 minutes until the barley is tender.
After the barley is cooked, taste and adjust seasoning if needed. A squeeze of lemon juice can brighten up the flavors.
Ladle the soup into bowls and sprinkle with freshly chopped parsley for garnish. Enjoy!
