Ingredients

Scale
  • 4 cups of all-purpose flour (plus extra for dusting)
  • 1 cup of whole milk, warmed (not hot!)
  • 1/2 cup of granulated sugar
  • 2 1/4 teaspoons of active dry yeast
  • 1/4 cup of unsalted butter, melted
  • 2 large eggs
  • 2 tablespoons of cocoa powder
  • 1 tablespoon of red food coloring
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of salt
  • 1/2 cup of brown sugar, packed
  • 1 tablespoon of cinnamon
  • 1/4 cup of unsalted butter, softened (for spreading)
  • 8 oz of cream cheese, softened
  • 1/4 cup of unsalted butter, softened (for frosting)
  • 2 cups of powdered sugar
  • 1 teaspoon of vanilla extract (for frosting)
  • A pinch of salt (for frosting)

  • Instructions

  • In a small bowl, combine the warmed milk, granulated sugar, and yeast. Let it sit for about 5-10 minutes until it bubbles and foams.
  • In a large mixing bowl, combine the flour, salt, cocoa powder, and red food coloring. Make a well in the center and pour in the activated yeast mixture, melted butter, and eggs. Stir until a dough forms.
  • Turn the dough out onto a lightly floured surface. Knead for about 5-7 minutes until it’s smooth and elastic.
  • Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours or until it doubles in size.
  • Once your dough has risen, preheat your oven to 350°F (175°C).
  • In a bowl, mix the brown sugar and cinnamon together, setting it aside for later.
  • Gently punch down the dough and roll it out on a floured surface into a large rectangle (about 16×12 inches).
  • Use your soft butter and spread it all over the rolled-out dough, leaving a little bit of an edge. Sprinkle the cinnamon-sugar mixture evenly over the buttered dough.
  • Starting from one long side, carefully roll the dough up into a tight log. Pinch the seams to seal it when finished.
  • Cut the log into 12 equal pieces and arrange them in a greased 9×13 inch baking dish.
  • Cover the rolls with the kitchen towel again and let them rest for 30 minutes.
  • Bake in the preheated oven for 25-30 minutes or until the rolls are golden brown.
  • While your rolls are baking, beat together the softened cream cheese, butter, powdered sugar, vanilla extract, and a pinch of salt in a bowl until smooth and creamy.
  • Once the rolls are out of the oven and cooled for a few minutes, generously spread your cream cheese frosting on top.
  • Notes

These delightful rolls are soft, pillowy, and bursting with flavor, making them a perfect addition to your weekend brunch or a special holiday gathering.
