8 oz (225g) rice noodles
1 lb (450g) beef flank steak, thinly sliced
3 tbsp hoisin sauce
2 tbsp soy sauce
1 tbsp sesame oil
3 cloves garlic, minced
1 inch ginger, freshly grated
1 bell pepper, sliced
1 cup snap peas or green beans
2 green onions, sliced, for garnish
Sesame seeds, optional, for garnish
Salt and pepper, to taste
Prep the noodles: If using dried rice noodles, soak in hot water for 20-30 minutes. Fresh noodles can be rinsed under cold water.
Marinate the beef: Mix sliced beef with hoisin sauce, soy sauce, and sesame oil. Let it marinate for 15 minutes.
Sauté the aromatics: Heat oil in a large pan or wok, add garlic and ginger, and sauté until fragrant.
Cook the beef: Push aromatics aside, add marinated beef, and stir-fry for 3-4 minutes until just cooked.
Add the veggies: Toss in bell pepper and snap peas, stir-fry for another 2-3 minutes.
Combine with noodles: Add drained noodles, and toss everything together to mix well.
Taste and adjust: Add salt, pepper, or more hoisin to taste.
Garnish and serve: Plate noodles and top with green onions and sesame seeds.
