1 lb of Chicken breasts (boneless, skinless)
1/4 cup of Honey
Juice of 2 limes
3 cloves of Garlic (minced)
1 cup of Rice (white or brown)
2 tbsp of Olive oil
1/4 cup of Cilantro (fresh, chopped)
Salt to taste
Pepper to taste
In a bowl, mix the honey, lime juice, minced garlic, salt, and pepper.
Add the chicken breasts to the marinade, ensuring they are well-coated. Cover and marinate for at least 30 minutes.
While the chicken is marinating, prepare your rice according to package instructions. Optionally, use chicken broth instead of water.
Heat olive oil in a skillet over medium heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side until golden brown.
In the same skillet, add the reserved marinade and let it simmer for 5-7 minutes until slightly thickened.
In a serving bowl, layer the cooked rice, followed by the sliced chicken. Drizzle with the reduced marinade and sprinkle with cilantro.
