8 oz of penne or fusilli pasta
2 boneless, skinless chicken breasts
¼ cup of honey
1 tablespoon of olive oil
1 teaspoon of black pepper
2 cloves of garlic, minced
½ cup of heavy cream
1 cup of baby spinach
Salt to taste
Parmesan cheese for garnish
Fresh parsley, chopped (optional, for garnish)
Start by cooking your pasta according to package instructions with a generous pinch of salt.
While the pasta cooks, heat a large skillet over medium-high heat and add the olive oil. When shimmering, add the chicken breasts.
Season the chicken with salt and half of the black pepper. Cook for 5-7 minutes on each side until golden brown.
Remove the chicken from the skillet and let it rest for a few minutes before slicing.
In the same skillet, add minced garlic and remaining black pepper. Sauté for about 30 seconds.
Pour in the heavy cream and honey, stirring to combine. Simmer for 2-3 minutes until slightly thickened.
Slice the rested chicken into bite-sized pieces.
Add the cooked pasta and baby spinach to the skillet, tossing to coat with the sauce.
Add the sliced chicken back to the pan and gently toss everything together.
Serve immediately, garnished with grated Parmesan and chopped parsley.
