1 can (15 oz) of chickpeas (canned or cooked)
3 tablespoons of butter
1 medium onion, finely chopped
4 cloves of garlic, minced
1 tablespoon of ginger, grated
1 can (15 oz) of crushed tomatoes
1 can (13.5 oz) of coconut milk
1 teaspoon of cumin powder
1 teaspoon of coriander powder
1 teaspoon of garam masala
Salt to taste
Fresh cilantro for garnish
Step 1: Heat butter in a large skillet over medium heat. Add finely chopped onions and sauté until golden brown, about 5-7 minutes.
Step 2: Stir in minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.
Step 3: Add crushed tomatoes, cumin powder, coriander powder, and salt. Simmer for 5-10 minutes until thickened.
Step 4: Mix in drained and rinsed chickpeas and coconut milk. Let it simmer for another 10-15 minutes.
Step 5: Sprinkle in garam masala, stir and let it cook for an additional couple of minutes.
Step 6: Remove from heat, garnish with freshly chopped cilantro, and serve hot with naan, rice, or quinoa.
