  • 2 fillets of fresh salmon (about 68 oz each)
  • 1 cup pesto (homemade or store-bought)
  • 2 tablespoons olive oil
  • 2 cloves fresh garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

  • Instructions

  • Bring a large pot of salted water to a boil. Once boiling, add the spaghetti and cook according to package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain and set aside.
  • Heat the olive oil in a large skillet over medium heat. Season the salmon fillets with salt and pepper. Once hot, add the salmon skin-side down and cook for about 4-5 minutes on each side. Remove from the skillet and flake into bite-sized pieces.
  • In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  • Toss in the halved cherry tomatoes and sauté for about 3-4 minutes until they soften and burst.
  • Lower the heat and add in the cooked pasta, pesto, and a splash of reserved pasta water. Gently fold everything together.
  • Stir in the grated Parmesan cheese, melting it into a creamy texture. Add more reserved pasta water if needed.
  • Plate the dish, sprinkling extra Parmesan and fresh basil leaves. Serve warm.
