1 cup of brown sugar, packed
½ cup of granulated sugar
2 large eggs
1 teaspoon of pure vanilla extract
1 teaspoon of peppermint extract
2 cups of all-purpose flour
½ teaspoon of baking soda
¼ teaspoon of salt
1 ½ cups of chocolate chips (dark or semi-sweet)
Green food coloring (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar using an electric mixer until light and fluffy.
Crack in the eggs, and add the vanilla and peppermint extracts. Mix until combined.
In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients, mixing just until combined.
Fold in the chocolate chips and green food coloring if desired.
Drop rounded balls of cookie dough onto a parchment-lined baking sheet, leaving about 2 inches between each one.
Bake for about 10-12 minutes until edges are lightly golden.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
