9 lasagna noodles (no-boil or regular)
1 lb ground turkey
2 cups fresh spinach
1 small butternut squash (about 2 cups when diced)
1 onion, finely chopped
3 cloves garlic, minced
28 oz can crushed tomatoes
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
15 oz ricotta cheese
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Olive oil for sautéing
Instructions
Preheat your oven to 375°F (190°C).
Peel and dice the butternut squash into small cubes, toss with olive oil, salt, and pepper, then roast on a baking sheet for about 20-25 minutes.
In a large skillet over medium heat, add olive oil and sauté the chopped onion until translucent. Add minced garlic, stir in ground turkey, and cook until browned.
Stir in fresh spinach and cook until wilted. Pour in crushed tomatoes, add basil, oregano, salt, and pepper. Let simmer for 10 minutes.
In a bowl, mix ricotta cheese, 1 cup of mozzarella, half of the Parmesan, salt, and pepper.
In a baking dish, layer turkey sauce, 3 noodles, half of the ricotta mixture, half the roasted squash. Repeat with more turkey sauce, noodles, remaining ricotta, and squash.
Top with remaining noodles, turkey sauce, and the rest of the mozzarella and Parmesan cheeses.
Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until cheese is bubbly and golden brown.
Let cool for 10-15 minutes before cutting.
