500 grams of boneless chicken breast, cubed
2 tablespoons of ginger, minced
2 tablespoons of garlic, minced
1/4 cup of soy sauce
2 tablespoons of chili sauce
1 tablespoon of tomato ketchup
1 tablespoon of cornstarch
1 onion, sliced into rings
1 bell pepper, sliced
2–3 green chilies, slit
2 tablespoons of vegetable oil
1 teaspoon of sesame oil
Fresh cilantro or spring onions for garnish
In a bowl, mix the cubed chicken with 1 tablespoon of soy sauce, chili sauce, and cornstarch. Let it sit for about 15-20 minutes.
Heat the vegetable oil in a large pan or wok over medium heat. Add minced ginger and garlic; stir for 30 seconds until fragrant.
Add the marinated chicken to the pan. Cook for about 5-7 minutes, stirring frequently, until the chicken is golden and cooked through.
Toss in the sliced onions, bell peppers, and green chilies. Stir-fry for another 2-3 minutes until they are slightly soft.
In a small bowl, mix the remaining soy sauce and tomato ketchup. Pour it over the chicken and veggies, and let it simmer for another minute.
