  • 1 ¼ cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 8 slices of prosciutto
  • 1 ball of fresh burrata cheese
  • ½ cup arugula or spinach (for freshness)
  • 1 ripe tomato, thinly sliced
  • Fresh basil leaves (for serving)
  • Olive oil (for drizzling)
  • Balsamic reduction (optional for finishing)

  • Instructions

  • Rinse 1 cup of sushi rice under cold water until the water runs clear. Combine the rinsed rice and 1 ¼ cups water in a medium saucepan. Bring it to a boil, lower the heat, cover, and simmer for about 18 minutes. Remove from heat and let it sit, covered, for an additional 10 minutes.
  • In a small bowl, mix together 1 tablespoon of rice vinegar, 1 tablespoon of sugar, and ½ teaspoon of salt. Gently fold this mixture into the rice after it’s cooled.
  • Place a sushi mat or a clean kitchen towel on a flat surface. With damp hands, spread a thin layer of rice over the mat, leaving about an inch at the top.
  • Lay down 1-2 slices of prosciutto over the rice, followed by a dollop of burrata, a few arugula leaves, and a slice of tomato.
  • Starting from the bottom of the mat, roll it tightly away from you, applying gentle pressure. Wet the edge slightly with water to seal the roll.
  • Use a sharp knife to slice your sushi into bite-sized pieces. Arrange them on a platter, drizzle with olive oil, and balsamic reduction if desired.
