Ingredients
Scale
2 lbs of boneless, skinless chicken breasts (or thighs for extra juiciness)
1 cup of BBQ sauce (store-bought or homemade; smoky blend preferred)
1 tablespoon of olive oil
1 teaspoon of garlic powder
1 teaspoon of onion powder
1 teaspoon of smoked paprika
Salt and pepper to taste
Hamburger buns (soft and fluffy)
Coleslaw (optional)
Pickles, onion, or any other toppings you love
Instructions
Begin by patting the chicken breasts dry with a paper towel.
In a bowl, mix the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this flavorful mixture all over the chicken.
You can either grill, bake, or cook your chicken in a slow cooker. Grill over medium heat for about 6-7 minutes per side or until it reaches an internal temperature of 165°F (75°C); for a slow cooker, place seasoned chicken in with a splash of water or broth and cook on low for 4-6 hours.
Once cooked and tender, shred the chicken using two forks in a large bowl. Pour in the BBQ sauce and stir until everything is coated.
Lightly toast your buns in a pan with a touch of butter or on the grill for just a minute or two.
Load up your bun with BBQ chicken, adding toppings like pickles, onion, or coleslaw. Top it off with the other half of your bun.
