1 ½ cups shredded mozzarella cheese
½ cup almond flour
1 egg
1 teaspoon baking powder
½ teaspoon garlic powder
½ teaspoon salt
2 cups cooked pulled pork
½ cup low-carb BBQ sauce
1 cup shredded cheese (mozzarella or cheddar)
Optional: sliced jalapeños, red onions, or cilantro for garnish
Instructions
Preheat your oven to 425°F (220°C).
In a microwave-safe bowl, combine the shredded mozzarella and almond flour. Microwave for about 30 seconds, stir, then microwave again until melted (about another 30 seconds).
Once cheese is melted, add the egg, baking powder, garlic powder, and salt. Stir until fully combined.
Place the dough on a parchment-lined baking sheet and spread it into a circle or rectangle, about ¼ inch thick.
Bake the crust for 10-12 minutes, or until golden brown.
While the crust is baking, heat up the pulled pork in a pan over low heat and stir in the BBQ sauce until well coated.
Once the crust is done, sprinkle a cup of shredded cheese across it and top with the BBQ pulled pork mix.
Return the pizza to the oven and bake for an additional 5-7 minutes until the cheese is bubbly and slightly browned.
