Delight in this quick red curry soup packed with lentils A healthy flavorful dish thats easy to make and perfect for any meal
1 tablespoon of olive oil
1 medium onion, diced
2 cloves of garlic, minced
1 tablespoon of fresh ginger, minced
1 tablespoon of red curry paste
2 cups of vegetable broth
1 can (14 oz) of coconut milk
1 cup of dried red lentils, rinsed and drained
1 medium carrot, diced
1 red bell pepper, diced
1 teaspoon of salt
1 tablespoon of lime juice
Fresh cilantro or basil for garnish
In a large pot, heat the olive oil over medium heat.
Add the diced onion and sauté for about 5 minutes until translucent. Add minced garlic and ginger and sauté until fragrant.
Stir in the red curry paste and cook for another minute.
Gradually add the vegetable broth and coconut milk, stirring to combine.
Add the lentils, carrot, and red bell pepper, stir, and bring to a gentle simmer.
Let the soup simmer for about 20 minutes, until the lentils are tender.
Once cooked, stir in the lime juice and adjust the seasoning with salt.
Ladle into bowls and garnish with fresh cilantro or basil.
