  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon of fresh ginger, minced
  • 1 tablespoon of red curry paste
  • 2 cups of vegetable broth
  • 1 can (14 oz) of coconut milk
  • 1 cup of dried red lentils, rinsed and drained
  • 1 medium carrot, diced
  • 1 red bell pepper, diced
  • 1 teaspoon of salt
  • 1 tablespoon of lime juice
  • Fresh cilantro or basil for garnish

  • Instructions

  • In a large pot, heat the olive oil over medium heat.
  • Add the diced onion and sauté for about 5 minutes until translucent. Add minced garlic and ginger and sauté until fragrant.
  • Stir in the red curry paste and cook for another minute.
  • Gradually add the vegetable broth and coconut milk, stirring to combine.
  • Add the lentils, carrot, and red bell pepper, stir, and bring to a gentle simmer.
  • Let the soup simmer for about 20 minutes, until the lentils are tender.
  • Once cooked, stir in the lime juice and adjust the seasoning with salt.
  • Ladle into bowls and garnish with fresh cilantro or basil.
