1 cup of warm water (around 110°F)
2 teaspoons of sugar
2 ¼ teaspoons of active dry yeast (1 packet)
3 cups of all-purpose flour, plus extra for dusting
½ teaspoon of salt
2 tablespoons of olive oil (or melted butter)
1 cup of shredded mozzarella cheese
½ cup of grated Parmesan cheese
1 teaspoon of garlic powder
1 teaspoon of Italian seasoning
In a medium bowl, combine the warm water, sugar, and yeast. Let it sit for around 5-10 minutes until it bubbles.
In a large mixing bowl, whisk together the flour and salt.
Once the yeast is frothy, add it to the flour mixture along with the olive oil. Stir gently until a dough starts to form.
Dump your dough onto a floured surface and knead for about 5-7 minutes until it’s smooth and elastic.
Form the dough into a ball and place it in a greased bowl, covering it with a clean kitchen towel. Let it rise in a warm place for about 1 hour.
While the dough rises, mix your mozzarella, Parmesan, garlic powder, and Italian seasoning in a bowl.
Punch down the risen dough gently, divide it into 12-16 pieces, fill each with the cheese mixture, and seal them.
Place your filled puffs on a baking sheet, cover them, and allow them to rise for another 30 minutes.
Preheat your oven to 375°F (190°C).
Bake the puffs for 20-25 minutes until golden brown.
Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
