  • 2 cups cooked rice
  • 2 cups fresh or frozen broccoli florets
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream or Greek yogurt
  • 1 cup chicken or vegetable broth
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup breadcrumbs (optional)
  • 2 tablespoons olive oil

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for about 3-4 minutes until soft. Toss in the minced garlic and sauté for another minute until fragrant.
  • In a large mixing bowl, combine the cooked rice, sautéed onion and garlic, broccoli florets, sour cream, chicken broth, 1 1/2 cups of the shredded cheese, salt, pepper, and paprika. Stir everything together until well combined.
  • Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
  • If you’re using breadcrumbs, sprinkle them over the mixture. Then, top everything off with the remaining 1/2 cup of shredded cheese.
  • Pop the baking dish into the preheated oven and bake for 25-30 minutes, or until the top is bubbly and golden brown.
  • Let it cool for a few minutes before serving.
