2 cups cooked rice
2 cups fresh or frozen broccoli florets
2 cups shredded cheddar cheese
1 cup sour cream or Greek yogurt
1 cup chicken or vegetable broth
1/2 cup chopped onion
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 cup breadcrumbs (optional)
2 tablespoons olive oil
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for about 3-4 minutes until soft. Toss in the minced garlic and sauté for another minute until fragrant.
In a large mixing bowl, combine the cooked rice, sautéed onion and garlic, broccoli florets, sour cream, chicken broth, 1 1/2 cups of the shredded cheese, salt, pepper, and paprika. Stir everything together until well combined.
Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
If you’re using breadcrumbs, sprinkle them over the mixture. Then, top everything off with the remaining 1/2 cup of shredded cheese.
Pop the baking dish into the preheated oven and bake for 25-30 minutes, or until the top is bubbly and golden brown.
Let it cool for a few minutes before serving.
