1 lb of chicken breast, diced
2 tablespoons of olive oil
1 medium onion, diced
2 cloves of garlic, minced
1 bell pepper, diced
1 zucchini, diced
1 cup of cauliflower rice
1 tablespoon of chili powder
1 teaspoon of cumin
1 teaspoon of paprika
Salt and pepper, to taste
Chopped cilantro for garnish
Lime wedges for serving
Heat the olive oil over medium heat in a large skillet. Make sure it’s hot enough, so the chicken sizzles upon hitting the pan.
Add the diced chicken breast, seasoning with salt and pepper, and sauté until golden and cooked through (around 5-7 minutes).
Once the chicken is cooked, toss in the diced onion and garlic. Sauté them together for about 2-3 minutes until the onions become translucent.
Next, add the bell pepper and zucchini. Stir occasionally, letting the veggies cook until they’re tender (about 5 minutes).
Sprinkle in the chili powder, cumin, and paprika. Mix well to coat everything in spices.
Finally, add the cauliflower rice and stir it all together. Let it cook for another 2-3 minutes.
Remove from heat, garnish with fresh cilantro, and serve with lime wedges.
