  • 3 cloves of garlic, minced
  • 1/2 cup of extra virgin olive oil
  • 1/4 cup of fresh basil, chopped
  • 1/4 cup of Parmesan cheese, grated
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste

  • Soak the sun-dried tomatoes in hot water for about 10 minutes if they are dried and not packed in oil. Drain and pat dry.
  • In a food processor, combine the soaked sun-dried tomatoes, minced garlic, olive oil, fresh basil, grated Parmesan cheese, and lemon juice. Pulse until smooth.
