2 cups of cooked and shredded boneless, skinless chicken breasts
1 medium cucumber, diced
1 cup of halved cherry tomatoes
1/4 cup of thinly sliced red onion
1/4 cup of chopped fresh parsley
1 cup of Greek yogurt
2 cloves of minced garlic
2 tablespoons of lemon juice
1 tablespoon of olive oil
Salt and pepper to taste
Instructions
