4 boneless, skinless chicken breasts
Salt and pepper, to taste
2 tablespoons of olive oil
1 medium onion, chopped
3 cloves of garlic, minced
1 cup of chicken broth
1 cup of heavy cream
1 tablespoon of Dijon mustard
1 teaspoon of dried thyme
1 teaspoon of paprika
1/2 teaspoon of cayenne pepper (optional)
Fresh parsley, chopped, for garnish
Instructions
Season the chicken breasts generously with salt and pepper on both sides.
In a large skillet over medium heat, add olive oil. Once hot, add the chicken breasts and sear for 5-7 minutes on each side until golden brown.
Once cooked, remove the chicken from the skillet and set aside to rest.
