  • 2 cups of Cooked Rice
  • 1 can (15 oz) of Black Beans
  • 1 Bell Pepper, diced
  • 1 Onion, chopped
  • 3 cloves of Garlic, minced
  • 2 tbsp of Taco Seasoning
  • 1 cup of Chicken Broth
  • 1 cup of Cheddar Cheese, shredded (optional)
  • 2 tbsp of Olive Oil
  • Fresh Cilantro for garnish

  • Instructions

  • Gather all your ingredients. Chop the onion, bell pepper, and garlic, and set them aside. Rinse the black beans if you are using canned.
  • In a large skillet over medium-high heat, add the olive oil. Once hot, add the ground beef and cook for about 5-7 minutes until browned, breaking it apart. Drain any excess fat.
  • Add the chopped onion and bell pepper to the skillet. Sauté for about 3-4 minutes until the vegetables soften, then add the minced garlic and cook for an additional minute.
  • Sprinkle the taco seasoning over the beef and vegetables. Stir well to coat everything evenly. Add the cooked rice and black beans, mixing everything together.
  • Slowly pour in the chicken broth, stirring constantly. Bring to a simmer and let it cook for about 5 minutes.
  • If using cheese, sprinkle it over the skillet and cover for 2-3 minutes until melted. Remove from heat and garnish with fresh cilantro.
