1 lb of Ground Beef
2 cups of Cooked Rice
1 can (15 oz) of Black Beans
1 Bell Pepper, diced
1 Onion, chopped
3 cloves of Garlic, minced
2 tbsp of Taco Seasoning
1 cup of Chicken Broth
1 cup of Cheddar Cheese, shredded (optional)
2 tbsp of Olive Oil
Fresh Cilantro for garnish
Instructions
Gather all your ingredients. Chop the onion, bell pepper, and garlic, and set them aside. Rinse the black beans if you are using canned.
In a large skillet over medium-high heat, add the olive oil. Once hot, add the ground beef and cook for about 5-7 minutes until browned, breaking it apart. Drain any excess fat.
Add the chopped onion and bell pepper to the skillet. Sauté for about 3-4 minutes until the vegetables soften, then add the minced garlic and cook for an additional minute.
Sprinkle the taco seasoning over the beef and vegetables. Stir well to coat everything evenly. Add the cooked rice and black beans, mixing everything together.
Slowly pour in the chicken broth, stirring constantly. Bring to a simmer and let it cook for about 5 minutes.
If using cheese, sprinkle it over the skillet and cover for 2-3 minutes until melted. Remove from heat and garnish with fresh cilantro.
