3/4 cup of Granulated Sugar
1 tablespoon of Vanilla Extract

1 cup of Heavy Cream
4 large Egg Yolks
1/4 cup of Flour (all-purpose)
1/4 teaspoon of Salt
Powdered Sugar for dusting
Instructions
If using store-bought puff pastry, allow it to thaw as per package instructions. If making homemade, roll out your dough to 1/8 inch thick and cut it into three equal rectangles. Place them on a baking sheet lined with parchment paper.
Preheat your oven to 400°F (200°C). Bake the pastry rectangles for 15-20 minutes until they are golden brown and crisp. To keep them flat, place another baking sheet on top while baking. Let cool completely on a wire rack.
In a saucepan, heat the milk and half of the sugar over medium heat until warmed. In a separate bowl, whisk together the egg yolks, remaining sugar, flour, and salt until smooth. Once the milk is warm, slowly whisk it into the egg mixture, then return everything to the saucepan. Cook over low heat, stirring continuously, until thickened. Stir in the vanilla extract, then transfer to a bowl, covering the surface with plastic wrap to prevent a skin from forming. Let it cool.
Once the pastry cream is cool, whip the heavy cream until soft peaks form, then fold it into the pastry cream until combined. This cream will be your delicious filling!
Begin by laying one rectangle of puff pastry on a clean surface and spreading half of the pastry cream on top. Add another layer of puff pastry, then spread the remaining pastry cream. Finally, top with the last piece of puff pastry. Chill for at least 30 minutes to set before slicing.
Once chilled, dust the top layer with powdered sugar. You can also drizzle melted chocolate or caramel sauce on top for added flair. Cut the Mille Feuille into squares or rectangles to serve.
