2 cups of chopped mushrooms (cremini or button)
1 cup of shredded Gruyère cheese
4 tablespoons of unsalted butter
1 medium onion, chopped
2 cloves of minced garlic
1 cup of chicken or vegetable broth
½ cup of heavy cream
Salt to taste
Pepper to taste
1 teaspoon of chopped fresh thyme or parsley
2 dough discs of pie crust (store-bought or homemade)
Instructions
Step 1: Melt the butter in a large skillet over medium heat. Add the chopped onions and sauté until translucent. Stir in minced garlic and sauté until fragrant.
Step 2: Add chopped mushrooms and cook until they release moisture and brown. Season with salt and pepper, then sprinkle flour and combine. Gradually add broth, stirring until thickened, then stir in cream and cheese.
Step 3: Preheat the oven to 400°F (200°C). Roll out the pie crust and cut rounds for your ramekins. Spoon the mushroom filling into the baking dish, top with the crust, and seal edges.
Step 4: Cut slits in the tops and place on a baking sheet. Bake for 20-25 minutes until golden brown. Let cool before serving.
