2 cups of all-purpose flour
1 ½ cups of granulated sugar
½ cup of unsalted butter, softened
1 cup of milk (whole milk or buttermilk)
2 large eggs
1 tablespoon of lemon zest (about 1 lemon)
¼ cup of fresh lemon juice (about 1–2 lemons)
1 tablespoon of baking powder
½ teaspoon of salt
1 cup of fresh blueberries (or frozen, with caution of excess moisture)
8 oz of cream cheese, softened
½ cup of unsalted butter, softened
4 cups of powdered sugar
1 teaspoon of vanilla extract
1 tablespoon of milk (or more for desired consistency)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and set them aside.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes on medium speed.
Add the eggs one at a time, mixing well after each addition. Scrape the sides of the bowl to incorporate everything.
Mix in the lemon zest and juice.
Gradually add the dry ingredients to your wet mixture, alternating with the milk, starting and finishing with the flour mixture. Don't overmix.
Gently fold in the blueberries, being careful not to crush them.
Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, allow the cakes to cool in the pans for about 10 minutes, then turn them out onto wire racks to cool completely.
Prepare the cream cheese frosting by beating the softened cream cheese and butter until smooth. Gradually add the powdered sugar until fluffy, then add vanilla and milk.
Place one cake layer on a serving plate, spread a layer of frosting on top, add blueberries, then top with the second layer. Frost the top and sides of the cake and decorate with remaining blueberries.
