1 pound of fresh mushrooms (cremini or button), sliced
4 tablespoons of butter
1 medium onion, diced
2 cloves of garlic, minced
4 cups of vegetable broth
1 cup of cream (heavy or half-and-half)
1 teaspoon of dried thyme
Salt to taste
Pepper to taste
In a large pot, melt the butter over medium heat. Add the diced onion and sauté for about 5 minutes, until translucent.
Stir in the minced garlic, cooking for an additional minute before adding the sliced mushrooms. Cook for about 10 minutes.
Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 15 minutes.
