1 ½ cups graham cracker crumbs
⅓ cup granulated sugar
½ cup unsalted butter, melted
2 (8 oz) packages cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 ½ cups heavy whipping cream
2 cups fresh strawberries, hulled and sliced (plus extra for garnish)
Fresh mint leaves (optional)
Chocolate drizzle (optional)
Instructions
In a mixing bowl, combine the graham cracker crumbs and granulated sugar. Drizzle in the melted butter and mix until well combined. Press this mixture firmly into the bottom of a 9×9 inch baking dish.
Pop the crust into the fridge while you prepare the filling.
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Add in the powdered sugar and vanilla extract, mixing until fluffy.
In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until combined.
Fold in the sliced strawberries, ensuring they’re evenly distributed throughout the filling.
Pour the filling over the chilled crust, spreading it evenly. Smooth the top and add extra strawberry slices if desired.
Cover with plastic wrap and refrigerate for at least 4 hours to set.
Once set, remove from the fridge, slice into bars, and serve with optional mint leaves or chocolate drizzle.
