1 cup mixed olives (green and black; pitted and chopped)
1/2 cup pomegranate seeds
1/2 cup walnuts, roughly chopped
1/4 cup red onion, finely diced
1 clove fresh garlic, minced
1/4 cup fresh parsley, chopped
1 tbsp lemon juice
1–2 tbsp olive oil
Salt and pepper to taste
Begin by pitting and chopping your mixed olives. Toss them into a large mixing bowl.
Toss in the chopped walnuts. Optionally, toast the walnuts in a dry pan over medium heat until golden.
Sprinkle the pomegranate seeds, diced red onion, minced garlic, and parsley over the olives and walnuts.
Drizzle in the lemon juice and olive oil. Toss everything gently to combine.
Add salt and pepper as needed to taste.
Refrigerate for 10-15 minutes before serving to allow the flavors to meld.
